A quick trip to st george

Right before the big car accident, we went on a road trip to St. George. 
We played at the pool. 
We went razoring in the amazingly hot heat, so we stopped by Sand Hollow Reservoir and drove right up on the beach to take a quick dip in the nice cold water. 
We watched movies every night.
We played pickle ball.
We went road biking up Snow Canyon. 
We went and ate at new BBQ place (to us): DUB's BBQ. We got a whole rack of ribs (which lasted us the whole trip) and enjoyed every bite. We will be going back!
Kevin went on a mountain bike ride, which meant I had to drive the rodeo, which meant I had to learn how to drive stick, which meant a headache for us both.  Yes I have never learned how to drive stick.  It all started when my dad tried to teach me one day and it all ended that same day with my dad making me get out of the car at an intersection (which I had stalled at for an entire light change).  He left me there.  Im kidding, he just never let me drive stick again.   Thank goodness our new truck is an automatic.

Wow do I have a lot of catching up to do. 
Life has been full of fun lately so I haven't had time to blog. But I am back! 

 Well a while ago, Kevin got in a car accident. A girl pulled right out in front of him and beat up the rodeo pretty bad. Both the airbags went off in it but luckily, no one got hurt in either vehicle. 

We knew just by the looks of it that the good old rodeo was a goner. It was totaled. 

That 1998 Isuzu Rodeo led a good life. We drove it to St. George and back for the first time just a few days before. We were nervous it wouldn't make it. But it did! It did fantastic. I really think the rodeo was so pleased with itself, that it wanted to go out with a bang. And a bang it did. 

 This accident was really a blessing in disguise. We got more money out of it then we would have trying to sell it. We also got a rental car for a week. This just happened to be when we were road tripping to California so it worked out perfectly. We turned that car back in with an extra 1,500 miles and plenty of sand to go with it.


Now give a big welcome to the newest addition to our family. The Tacoma! He's only a day old to us and we really love him. I think he is going to really fit in. Kevin has already given him a scrub down and placed his bikes in the back to let him know what his job is going to be like.

call me "the centurion"

My big century ride was last weekend.  My sister-in-law, mother-in-law and myself headed down to Logan on Friday.  We tried to carbo-load for dinner, but the Italian restaurant we wanted to go to was completely booked.  So we decided to go with steak and salad and got spoiled at Hamiltons.  We then followed our meal with some ice cream, and because I found a $20 bill while walking into Charlies Ice Cream, the cones were on me.  My caramel ice cream cone was probably the best ice cream I have ever had.  That Charlie knows what's up.
We went to our hotel and knew we were in the right place when we walked in and ladies and road bikes were everywhere.  That hotel was packed.  We got ready for bed and ended our night with stretches that had us all laughing.  
The next morning we woke up at 6:15 am.  Good heavens that is early for me.  Good thing I was anxious for the race.
I wasn't too happy about the 64 degree overcast weather that was happening that morning, but once we got on the bike, it was glorious.  We had that weather for the first 50 or so miles and my heart was so thankful.  
I really enjoyed these first 50 miles.  We rode with a group that had a great pace for a good 10 miles, on a smooth, new road.  We were averaging 20 mph and it felt so good.  I then got lazy while taking a drink and dropped my water bottle.  I lost the group.  I was this close to forgetting about my water bottle but then realized I had a long day of biking still ahead of me.  When I got off my bike and ran back for my water bottle, I almost fell over from the fatigue in my legs and a group of bikers laughed at me.  Good thing I was laughing too or I would have pushed them over as they rode by.  
At 50 miles we got to stop for a yummy lunch of subway and costco cookies.  Boy that chocolate chip cookie was good.  And that shot of diet coke Lorna found for me wasn't too shabby either.  After a good stretching session and sunscreen applying session, we were on our way.  
This was when it started to get tough.  The later half of the century ride included many more hills (There was one in the first 50 miles) and many more poorly paved roads which can ruin your average.  The next 20 miles went by slowly.  When we got to our 70 mile stop, we were pooped.  If we would have known what the next 30 miles were going to be like, we probably would  have turned around then and called it good.  But good thing we were oblivious.
We finished our ride at 5 hours and 59 minutes.  We were so happy to be done.  And I was so proud of myself.  
I then ate a whole Cafe Rio pork salad.  I have never done that before.  I was so proud.  Im sure that took up a good portion of the 6,000 calories I had burned.

I have yet to get back on my bike.  
Tomorrow maybe.
Or next week.  
I will let my legs decide.

superbike championships 2012


In another life, Kevin would choose to either be:
A) a fighter pilot or
B) a super bike racer.
He is crazy.  So when I heard there was a super bike race, a championship race non-the-less, here in Utah,  I knew we had to go.  We decided to bring along the brothers, since were good older siblings like that.

It was beautiful weather luckily.  It wasn't hot, but the sun was beating down on us pretty good.  We all got nice sunburns.  Next time, we will bring umbrellas.  And better food; actually a whole cooler full of food and drinks.  These boys would not stop eating; and snack food only lasts so long.  You live, you learn.

It was amazing to watch these world class racers go up to 200 mph.  200 mph! On a bike!  There were a few crashes, but amazingly, no injuries.  They jumped right up and ran off the track.  Too bad I was busy finding that last good piece of kettle corn out of the bag when one racer crashed right. in. front. of. me.  ROOOAR!!!  I threw that bag down and didn't touch it for the rest of the day.

Lately

We started the sanding and painting of our dresser my sweet MIL gave us.
We went on a 34 mile bike ride from North Salt Lake to Farmington on the Legacy Trail.    Even though we pushed ourselves and averaged 19 mph during the entire ride, I really enjoyed it!
At the halfway mark was a Harmons.  So we stopped to have a yummy lunch to take a break.
Our date night dinner that night was In N Out.  We love that place.  We then followed this with the movie The Avengers.   It was entertaining enough, but what happened with all the good dialogue in movies lately? 

recipe: Thai Chicken

I loved this chicken!  Give me any sauce that includes peanut butter, and I am a happy girl.

Thai Chicken
serves 2

2 chicken breasts, sliced in half
2 TB olive oil
salt & pepper

Sauce
1/4 cup rice vinegar
1/4 cup light coconut milk
3 Tb brown sugar
3 garlic cloves
1 TB creamy peanut butter
1 ts ginger
1 lime, juiced
1/2 Tb soy sauce

Garnish
1.2 cup fresh cilantro
1/4 cup chopped peanuts

Preheat oven to 375 F.  
Pat chicken breasts completely dry and season with salt and pepper.  
Combine all sauce ingredients.
Heat a large oven-safe skillet on medium high heat and add olive oil.  Add chicken and sear, about 2-3 minutes per side.  Remove breasts and set aside on plate.  Add sauce to skillet, bring to a boil and let simmer for 2 minutes, whisking constantly.
Add breasts back in, turn to coat on all sides in sauce and place skillet in oven.
Bake for 25-30 minutes.
Serve over rice, spoon extra sauce on top and garnish with peanuts and cilantro.

weekly meal plan #3



Monday:  Family took us to Cafe Rio :)



Tuesday:  Falafel with a cucumber-yogurt dressing in homemade flour tortillas. Watermelon on the side.

Wednesday:  Marinated pork tenderloin with sauteed cabbage and sourdough bread with a balsamic glaze.

Thursday:   Thai chicken wings with basmati rice, sliced cucumber with sea salt and fresh dinner rolls.


Friday: Date Night!!

Saturday:  Homemade cheese pizza and a side salad with homemade sourdough croutons.
